The Bertoldi farm with the experience gained over the years in the cultivation of the ancient olive trees is characterized by the production of extra virgin olive oil combining traditional farming techniques and respectful of the natural cycle of plants and innovative techniques of harvesting and extraction of olive oil.

There are many factors involved in the production of a superior quality extra virgin olive oil; with the knowledge and understanding of these elements in succession and combination in the production cycle from the plant to the oil, the desired result in final quality will be achieved.

The Azienda Agricola Bertoldi's olive grove is distinguished by the local native species. In particular the Casaliva Cultivar (in local language "Drezzer"), a species that was historically introduced by the ancient Romans and that over the centuries has adapted to the microclimate of the lake area.

Our traditional olive groves; which currently still characterise the majority of the farm's surface area, are mainly located on steep terrain or on terraces that make cultivation very burdensome, mainly using manual agronomic techniques. Moreover, even though the olive tree is a minor crop compared to its neighbours, it is still important from an environmental and landscape point of view.

Another aspect linked to the territory is the choice of the soil and its composition, soils that have a good drainage and a balance between clay and mineral composition can in fact not only meet the physiological needs of the olive tree to make it distinctive olive oil.

The olive tree is a multi-generation plant that adapts to many climatic and territorial situations, and therefore needs agronomic and cultural techniques targeted and distinct from plant to plant, as the olive groves of the Bertoldi farm aren’t "super intensive" crops " (this one have only the purpose to obtain the maximum production as possible); but instead they are inserted into the landscape with the characteristics of traditional olive trees with planting dimensions sized for the future secular growth of the plants themselves and therefore in the respect that they deserve.

In the summer of 2018 the farm expanded its activities with the opening of the Camping Grumèl. Located just outside the town of Nago and directly accessible from the SS240 road (Riva-Rovereto), it can host 6 pitch for RVs, trailers and tents.
